Salsa Chicken

Standard

A great recipe for delivering to a family in need, taking to a church function, or sharing with friends at home. It also makes an easy dinner when you are facing a long day at the office. Gotta love crock-pots.

Ingredients
3 pounds boneless, skinless chicken breasts or thighs
1 can cream of chicken or mushroom soup
1 cup salsa (we use Pace Medium)
1 package taco seasoning
1 cup sour cream
1 can of black beans, drained and rinsed (optional)

Garnishes: chopped cilantro, shredded Mexican (or Cheddar or Jack) cheese, diced scallions

Directions
Put chicken, soup, and salsa in slow cooker. Sprinkle taco seasoning over everything. Cook on low for 6 hours. Pull the chicken out and shred with forks; return to slow cooker for another 30 minutes. Stir in beans and sour cream until combined and heat through. Serve over rice or with warm tortillas. Top with garnishes or package them separately if delivering to another family.
